Description
Bonphool Chalta Achar is a special pickle recipe made from the fruit of the Elephant apple tree. The recipe is prepared using traditional methods in the Sundarban region. The unique taste of the pickle, which is enriched with roasted Indian spices, sets it apart from other pickles.
Senior citizen women in the Sundarban area are specialists in the traditional technique of making pickles. They train, educate, and pass on their knowledge to other women in the village, particularly those who are victims of tiger attacks or are widows. This is accomplished by forming a Self Help Group, which has helped more than 20 women by providing them with a means of livelihood.
The ingredients used to make Bonphool Chalta Achar include mustard oil, panch phoron (a blend of five spices), salt, sugar, red chili powder, turmeric powder, roasted cumin powder, roasted coriander powder, asafoetida (hing), bay leaf, whole dry red chilies, and nigella seeds (kalonji). The combination of these ingredients creates a mouthwatering pickle that is unique to Bonphool Chalta Achar and cannot be found anywhere else.
